Open corned beef package. Remove seasoning packet. Rinse corned beef with cold water.
Trim off large chunks of fat from corned beef.
Add corned beef to crockpot.
Open season packet and sprinkle on top of corned beef.
Add potatoes, carrots, and onions.
Pour in one can of beer and water. (If you do not want to use beer, you can add 16 ounces of water)
Add two bay leaves.
Cook on high for 5 hours.
With one hour remaining, add cabbage.

My secret ingredient is a can of beer. If you're looking to save some calories, use a light beer. If you enjoy the taste of a Guinness, use that. It will change the taste a bit, but in a great way.For this recipe I used Little Potato Company blushing belle red potatoes. They are small and work great in the slow cooker.
